Crustless Pumpkin Pie

This recipe is gluten free treat without all the sugar and it is high in protein. Enjoy a tasty  pumpkin treat all year long!

Ingredients:

– 1/2 cup pumpkin puree (canned or fresh)

– 1/2 cup Greek yogurt

– 1/4 cup protein powder (vanilla or unflavored work well)

– 1 large egg

– 1/2 teaspoon pumpkin pie spice

– 1/4 teaspoon salt

– 1-2 tablespoons sweetener (honey, maple syrup, or stevia)

Instructions:

1. Preheat oven to 375°F (190°C).

2. In a blender or food processor, combine pumpkin puree, Greek yogurt, protein powder, egg, pumpkin pie spice, and salt. Blend until smooth.

3. Add sweetener to taste and blend again.

4. Pour the mixture into ramekins or a small baking dish.

5. Bake for 20-25 minutes or until set.

6. Let cool, refrigerate, and serve chilled. You can top with whipped cream or nuts for extra flavor and texture. Enjoy!
